What's Included in Revenue
Revenue includes:
- Order subtotals
- Delivery fees
- VAT (if applicable)
Revenue excludes:
- Refunded orders (or shows them separately)
- Cancelled orders
💡 Tip: Review revenue daily during your first few weeks to understand your sales patterns.
Order Volume
Track how many orders you're receiving over time.
What to look for:
- Daily order count
- Peak days (e.g., Fridays and Saturdays)
- Seasonal trends (e.g., summer vs. winter)
How it helps:
- Plan staffing and ingredient purchasing
- Identify growth trends
- Spot unusual drops that may indicate issues
Average Order Value (AOV)
AOV is the average amount customers spend per order.
How it's calculated: Total revenue ÷ Total orders
Example:
- Revenue: £3,000
- Orders: 100
- AOV: £30
Why it matters:
- Higher AOV = more revenue per order
- Use discounts and minimums to increase AOV
- Track AOV after launching promotions
💡 Tip: If AOV is lower than expected, consider setting minimum orders or promoting higher-value items.
Fulfilment Mix
See how orders are split between delivery, pickup, and table service.
Example breakdown:
- Delivery: 60%
- Pickup: 30%
- Table Service: 10%
Why it matters:
- Understand which fulfilment types are most popular
- Optimise operations (e.g., hire drivers if delivery dominates)
- Adjust menu availability or pricing by fulfilment type
Time-of-Day Trends
Identify when orders are busiest throughout the day.
What you see:
- Order count by hour (e.g., 12:00–13:00, 18:00–19:00)
- Peak hours highlighted
How it helps:
- Staff appropriately for busy periods
- Adjust opening hours if early or late orders are minimal
- Plan ingredient prep around demand
Example insight: If 70% of orders come between 17:00–21:00, focus resources on dinner service.
Category Performance
See which menu categories generate the most revenue.
What you see:
- Revenue by category (e.g., Pizzas: £1,500, Drinks: £300)
- Order count by category
How it helps:
- Identify your bestsellers
- Promote underperforming categories
- Adjust menu based on what sells
Example insight: If "Desserts" generate only 5% of revenue, consider reducing the range or promoting them with discounts.
Timeframe Comparisons
Compare performance across different periods.
Examples:
- This week vs. last week
- This month vs. same month last year
What to look for:
- Growth trends (revenue increasing or decreasing)
- Seasonal patterns
- Impact of promotions or changes
💡 Tip: Use comparisons to measure the success of new menu items, discounts, or marketing campaigns.

Understand how many customers order more than once.
